I know the last thing you want to do is read manuals, but if you go to
<http://www.bmug.org/quicktime/mp3docs/> you can download a pdf for mac or
windows. This is for MoviePlayer 3, but the functionality is more or less
the same and I don't think there is anything similar for QuickTime Player 4
yet.

The main trick in MoviePlayer/QuickTime Player is to try out the menus with
different modifier keys - you'll see the menu options change. I think the
idea is to supply a fairly powerful QT editor which is arcane enough to
encourage third party developers to build and sell there own without being
threatened by the competition.
