Have a look at

http://www.volumeone.com and http://www.matinee.co.uk. This was all created
( I guess) in a 3d animation program and then each frame was traced into
vectors. But as long as the forms were fairly simple (ie the Adjacency menu)
you could mock it up in flash fairly easily using animated buttons.
