It's always easier to hardcode it, but it's also possible to read it in.
Reading
it in will take a little more work, but it will save on updates.

You'll need a server-side email script if you want to do something more
advanced than a simple mailto link. There are plenty of CGI scripts
out there that will work on any server where the correct modules are
installed. It's pretty easy to use these scripts once you've learned how,
and learning them isn't that difficult either. Of course, you can always do
a
simple //personataddress [dot] com (mailto://personataddress [dot] com) link, and even use javascript to
enhance it
(eg http://www.chepd.mq.edu.au/boomerang/teaching.www/javamail.htm )
