320x240 would probably work, ask your G3 person what sizes he/she's
used before. If he's not using a third-party video card that
would probably be your best bet.
To be sure couldn't you output in a few sizes, 320x240, 640x480,
400x300... that way you'll know to have one that will work.

The G3 will handle 30 fps and then some, but you'll have problems
previewing the .fla in real-time.
Also, .swf files tend to not run at an accurate frame rate, so save
your file as a quicktime movie and output that to tape.
I don't have the url handy, but all this info is available at the
macromedia site, a bit of searching will find it.
For instance, another concern is the color palette. The
colors you see on your PC monitor will be too hot for video.
