You want a macro creation program. I believe that QuicKeys (Mac & PC)
is the best or at least most popular/solid. You can basically have it
watch you go through a lonnnnnnnng series of steps, recording your
actions, then ya hit the "Stop Recording" button, assign a command
key equivalent (or a button in a floating palette YeeHaa!) and you're
all set.

I'm pretty sure that you can even do that first thing you mentioned
... and more straightforwardly than the process I just descibed.
I.e., I think I remember that there's an "assign key combo to menu
item" function in QuicKeys.

Geeze, now I gotta get out that QuicKeys upgrade that I bought months
ago and barely touched. It's time to get serious about productivity!
The faster ya work, the more $$ per hour you can charge and no one
will be any the wiser. :-)
