You're right, and it did change, true. Instead of calling up a modal dialog
to set a single object's fill, the non-modal Fill Inspector can work upon
multiple selections at once.

You already found the gradient settings in the Fill Inspector, and the
ability to make multi-color linear and radial vector gradients (just click
below the bar to add a new color chip).

Once you select a color chip in the gradient bar, you can set it via the
popup swatch in the Fill Inspector, or else mix a new color in the Color
Mixer. This lets you mix new red, green, blue, and alpha values for that
color chip in the gradient, and helps if you haven't already added a
transparent color to your swatch.
