The approach below would work but - and maybe I am a bit oldskool I would personally just use Flash. We had a massive multi-touch version of KartFighter at the BIMA awards last year and that was just a modified version of the flash game. Had it running at 1080p too... was hardcore. If you treated it like a touch enabled tablet / mobile device you could approach it like a mobile web project / HTML5 web application. something like www.sencha.com<http://www.sencha.com> would give you the toolset (including Sencha touch). HTML5 supports offline content, so you could wrap it all up in an offline container, you could even use a thin application and package up the preferred browser within it. That would then support updates over the web when you wanted - and you could run it on many different devices (assuming appropriate use of CSS3 for device specific styles). Just a thought..
